Life on the Farm

Here on the farm we have 40 cows milking. We have Holsteins, Jerseys, Holstein/Jersey Cross, & 1 Ayrshire. We aim for our milk to be high in components. (Butterfat & Protein) This gives our cheese a richer flavor with a creamier texture.

Our cows graze on pasture from May until October. Our primary feed is baleage. Baleage is hay that has 50-65% moisture which is then wrapped in plastic creating an air tight environment for fermentation.
